Greek Rub Roasted Baby Potatoes

Can you say EASY? Three ingredients. Under 30 minutes. Side dish...DONE! I told you when I made the Vegetable Pasta Salad with Pomegranate Balsamic Vinaigrette, that I had also purchased some other items from the Pampered Chef vendor that night. Well, this Greek Rub was another fabulous find. It contains garlic, lemon, bell peppers, and turmeric all in one nifty container. I just mixed it with a little olive oil and it made a great seasoning for my roasted potatoes. 

Greek Rub Roasted Baby Potatoes
1 lb. Red Baby C Potatoes
3 tbsp. Extra Virgin Olive Oil
1 tsp. Pampered Chef® Greek Rub

Wash the potato skins well then cut in half. Add the oil and Greek Rub and mix well. Place on a baking sheet and bake at 425 degrees for 20 minutes; turning halfway. Serves 4.
