Fiesta Turkey Meatloaf

I have NO idea what made me think of adding fresh limes to my ground turkey the other day, but I was certainly glad I did! The summer always make me crave foods that are light and refreshing and limes and cilantro certainly do the trick. I originally wanted to make these as burgers, but as soon as I was about to prepare them, we had this deluge of rain come down and I wasn't about to stand outside and grill them.  If you have some jalepeno peppers, add them as well to give it more of a kick! 


Fiesta Turkey Meatloaf
1 lb. 99/1 Ground Turkey
1/2 c. Tomatoes, chopped
1 tbsp. Red Onion, grated
1 Clove Garlic, minced
1 tbsp. Fresh Cilantro, chopped
1 Lime, zest and juice
1 tbsp. Canola Oil
1/2 tsp. Kosher Salt
1/4 tsp. Fresh Ground Black Pepper




Directions:

1. Mix all ingredients together, then form into a rectangle shape. 
2. Place in an oven safe baking dish and bake at 350 degrees for approximately 1 hour or until proper internal temperature is reached. Serves 6.

  1. Hi Carrie, found you my first time on FoodBlogs.com. I love to experiment, too, sometimes for the fun of it, sometimes out of necessity. Fiesta Turkey Meatloaf is my kinda food, except I can't eat red onions so will sub scallions, plus want to use up celery leaves in my frig so will sub them for cilantro. Don't you just hate to buy big pre-bundled herbs when you only need a little bit? I do. That's another reason for skipping the cilantro (which I do love). I know, I know, how can it taste as good as your original recipe with these changes?! I'm depending on the lime! I'll let you know how it turns out.

    1. Hi Kathleen and thank you for stopping by and commenting. I can't wait to hear how it comes out with your substitutions. That's the beauty of cooking, you can tweak a recipe to your liking and create an entirely new one that you like. :)

    2. Well Carrie, I think I totally distorted your wonderful recipe. 99/1% ground turkey was so expensive that I bought 94/6%. But, I cut the added oil in half to compensate. Tomatoes from my garden (who would have thought tomatoes would taste so good in a turkey loaf!). Green onion in place of red and garlic powder in place of fresh garlic (my stomach thanked me for that!). Celery leaves in place of cilantro ($2.99 for a tiny bunch of cilantro, ugh!). And guess what... I went off to the supermarket with list in hand, including a lime. I came home, unpacked... Wait, that's yellow, that's a lemon! Oh, well. I used half the zest and half the juice 'cause lemons are so much bigger than limes. So, you see what I mean about distorting your recipe? But, Carrie, it was delicious, really delicious, so thanks for steering me toward this new way of handling ground turkey.

  2. I love making meatloaf with ground turkey but tend to make it the same way every time. I'm excited to try your recipe for the next round to change up the flavors to be fiesta-style. Looks great!
