Virtual Pasta Party on Facebook

This past weekend, I invited some of my Facebook friends to post their favorite pasta dishes on my wall.  There were so many great new recipes to choose from and I've compiled a list to share with all of you. Click on the name of the recipe to be taken to the original post.

Mr. Pete's Cajun Spices
Ingredients: 
2.25 lbs. ground chuck, 2 onions, diced, 1- 14.5 oz. can Petite Diced Tomatoes, 1- 10 oz. can Original Rotel, 2- 8 oz. cans Tomato Sauce, 1- 6 oz. can Tomato Paste, 1 box of Oven-ready Lasagna noodles, 12 oz. shredded mozzarella cheese, Grated Parmesan Cheese, 2 tblspns. Mr. Pete's Cajun Seasoning, 1 tspn. Basil, 1 tspn. Oregano, and 1 tblspn. salt


Directions: Sautee' your onions in a non-stick skillet on medium to high heat. When clear, add your groundmeat and mix. Cook until browned, usually between 7-10 minutes. Remove from heat and pour into a strainer to drain grease. Return groundmeat mixture into the pan. Add the diced tomatoes, Rotel, Tomato Sauce, and Tomato Paste. Combine ingredients and simmer for approximately 30 minutes. Add your spices, including Mr. Pete's Cajun Seasoning, basil, oregano, and salt. Stir well and remove from heat. You will now begin layering your lasagna for baking. Spoon some of your meat mixture at the bottom of your baking dish. Sprinkle a handful of the shredded mozzarella cheise evenly on top of mixture. Then place 3 lasagna noodles on top side by side. Add more of the meat mixture on top of those noodles and top with more cheese. Once again, add 3 lasagna noodles on top. Continue layering until you have used all of your noodles. I used 18 for this recipe. Pour the remaining groundmeat mixture on the top and sides of your lasagna.Place in the oven @ 375 degrees covered for 1 hour or until noodles have cooked. Remove baking dish and drizzle remaining 1/2 cup shredded mozzarella cheese on top of baked lasagna and continue baking for 20 minutes uncovered or until cheese has begun to melt and brown.Because my babies were sick, I decided to make one of their favorite dishes, minus the wine of course. lol This lasagna was loaded with meat, and the melted cheese throughout the layers made this meal a success! It tasted amazing! You can also sprinkle the grated Parmesan cheese on top of lasagna before serving for those extra cheese lovers.
