Honey Cinnamon Roasted Cashews




Cashews are one of my favorite nuts to snack on. I just love the natural buttery flavor. So I decided to sweeten them up a bit by roasting them in honey and ground cinnamon. These cashews were delicious and made a light salty-sweet snack. ~Enjoy!




Honey Cinnamon Roasted Cashews
Prep Time:  5 minutes Cook Time:  15 minutes Yield: 2 Cups   Servings: 8 (1/4 cup)

Ingredients
2 c. Whole, Unsalted Cashews
1/4 c. Honey
1 tsp. Ground Cinnamon
1/4 tsp. Kosher Salt

Directions
1. Preheat oven to 350 degrees.
2. Heat the honey, cinnamon and salt in a small saucepan over low heat until the honey has thinned.
3. Add the cashews to a bowl; then pour the honey mixture over the nuts. Mix well.
4. Line a baking sheet with parchment paper and spread the nuts evenly on the pan and bake 12-15 minutes. Allow to cool completely and store in an airtight container for up to one week.

    I have gone crazy buying salted nuts lately (I think it's a childhood memory of having a nut bowl during the holidays?) but this--I think my next nut purchase needs to be unsalted, because this recipe sounds amazing.
