Yukon Gold are potatoes that have a smooth skin and yellow flesh. According to Wikipedia, they were developed in Ontario, Canada and not even introduced into the market until 1980. I like to use these potatoes every now and then as they have a slightly sweet flavor and taste great with added sour cream and chives.
Sour Cream & Chive Yukon Gold Mashed Potatoes
8 Yukon Gold Potatoes, peeled and cut into 2-3" chunks
1/4 c. Sour Cream
3 tbsp. Butter
2 tbsp. Chives, chopped
1/2 tsp. Kosher Salt
1/4 tsp. Fresh Ground Pepper
Add potatoes to a large saucepan and cover with cold water. Bring to a boil, and cook until potatoes are tender with a fork, approximately 15 minutes. Drain water and return the potatoes to the pan. Add sour cream, butter, chives, salt and pepper to potatoes. Mix together with an electric mixer until the butter has melted and most of the lumps are gone. Serves 6.
Enjoy!

These sound great! I have a standard casserole that I make for events and these would be so much prettier than the metal ones!
